A casual comment recently inspired an interest in Granola.  I’d heard of it but never really understood what it was.  I found a few recipes and then came up with my own version, using all the things I love to eat for breakfast!

Home Made Granola

2 cups rolled oats

1/2 cup shredded coconut

1/2 cup chopped nuts (I used almonds because that’s what I had)

1 tsp ground cinnamon

1/2 tsp ground nutmeg

pinch of salt

1/2 cup golden syrup

2 tblsp macadamia nut oil

2 tblsp boiling water

Preheat oven to 160 and place all dry ingredients in a bowl.  Mix golden syrup, water and oil then add to dry ingredients and mix well.

Place spread thinly on an oven tray and bake for 50 minutes until brown.  Cool and store in an airtight container.
